One night, we sat on the top deck watching the full moon rise with the fire pit going, and it was one of those Joshua Tree moments that reminds you why people come here in the first place. Quiet. Still. No pressure to do anything.
The mornings were just as good.
Waking up slowly, stepping into the cold desert air, and easing into the hot tub as the sun came up became my favorite ritual there. That alone made me want to come back.

I do not always talk about it much, but I actually love cooking.

So during the stay, I made one of my go-to meals: a salmon poke bowl.
It was simple, fresh, and exactly the kind of meal that felt right in a place like this.
For the salmon, I used Seatopia, which offers sushi-grade salmon options, and for sauces I used products from The Ginger Rabbit, a specialty Pan-Asian-American market in Yucca Valley. That local connection made it even better.

Easy Salmon Poke Bowl Recipe
This is not a strict recipe. It is more of a build-it-how-you-feel kind of meal, which is honestly part of why I love it.

How I Make It
Start by mixing your spicy mayo with mayonnaise and sriracha.
Cube the salmon and lightly toss it in ponzu yuzu.
